As we get into spring, our ducks are really producing a lot of eggs. Each bird seems to be producing an egg a day, much the way a productive chicken would. This is proving to be an excellent way to produce our own food.
These eggs are quite a bit larger than chicken eggs and have some other interesting characteristics as well. The shells a bit thicker and it’s actually a little tricky to crack them open. You have to be a little more forceful than you do with a chicken egg.
Once you do get them open, the whites and yolks have a thicker texture than chicken eggs and this actually makes them a little easier to cook. If you like fried eggs with soft yolks, duck eggs make this easy. The thicker texture makes it much easier to cook and flip the eggs in the pan without breaking the yolk.
The yolks are quite a bit larger as well and make these eggs really great for baking. We find them to be excellent for making egg bread.
